Not including the "spin-offs" like Mario Kart, Mario Party, Paper Mario, etc.
My favorite would have to be Super Mario 64. The move from linear gameplay to being able to explore 3D worlds without time restrictions was immensely liberating and provided hours upon hours of entertainment for my 8-year-old self. Finding all 120 stars was a huge challenge for me, and I enjoyed every minute of it.

I only played and finished up to Mario Bros 3, and a bunch of us used to play Mario Cart on 64.
If memory serves me 3 was fun and a big departure from 2 (it got deeper I think), but 2 is the one that made me notice the games.

I like Super Mario Bros. 3, but Super Mario World is my all time favorite. I have both Super Mario Bros. and they are really fun to play when I'm bored, but I haven't played them in a very long time
